A degustation is a trust exercise. You hand the menu to the kitchen; the kitchen hands back the season. Ours opens on the ocean — Moreton Bay bug, sand crab — moves through the valley's produce, and lands on the fire-cooked proteins the dining room smells every night.
Each course arrives with a sentence or two from the floor team: where the ingredient came from, why it matters, what to notice. The sommelier matches every plate with a pour that shares its mood. It runs around three hours and it does not rush.

The whole table must take part — the kitchen writes one sequence per table. Dietary adjustments are possible with notice, but the degustation can't accommodate vegan tables; the pantry structure doesn't bend that far. Weekend sittings book out three to four weeks ahead.
